Ingredients to make Veg Appe

  • Idli batter – 1 cup
  • onion – ½ finely chopped.
  • Green chilli – 1 finely chopped or sliced.
  • Grated ginger – ½ tsp
  • coriander leaves – 1 tbsp. finely chopped
  • Grated or finely shredded carrots – ¼ cup
  • Parboiled peas – ¼ cup
  • salt to taste
  • oil – 2-3 tbsp for greasing appe mould.
  • For serving –tomato chutney

How to make Veg Appe

  1. In a deep large bowl mix together idli batter, onion, green chillies, grated ginger, coriander leaves, grated carrot, parboiled peas, salt. Do not over mix.
  2. In a appe pan drizzle some oil. Spread all over with silicone brush or spatula.
  3. Pour a tbsp. batter in each mould.
  4. Cover and cook it for 1 minute. Remove lid and turn appe upside down using wooden fork or toothpick.
  5. Cook them from other side as well.
  6. Repeat the process with remaining batter.
  7. Serve with spicy tomato chutney.

My Tip:

Cover the lid and cook it for even cooking. Don’t overmix batter.
