ABOUT Kaya toast with soft cooked egg RECIPE

Kaya toast with soft cooked egg is a traditional breakfast in Singapore and parts of Malaysia. Kaya is a very sweet jam made with coconut milk and egg. Here i have used cardomom flavour instead of pandan in kaya jam. Usually it is served with black coffee.

Ingredients Serving: 1

  1. For kaya jam
  2. Sugar - 3/4 cup
  3. Egg Yolk- 2
  4. Thick Coconut milk- 1/2 cup
  5. Cardamom powder- 1/4 teaspoon
  6. For soft boiled egg
  7. egg- 1
  8. Water - 1 cup
  9. Pepper - 1/4 teaspoon
  10. Soya sauce - 1 teaspoon
  11. For toast
  12. Bread - 2 slice
  13. Butter - 1 slice

Instructions

  1. Heat a pan add sugar. Cook, stirring occasionally, until sugar has caramelized to a deep golden brown, 3 to 6 minutes.
  2. Then coconut milk.
  3. Heat mixture, stirring until smooth. Continue to cook, stirring occasionally, until mixture has thickened slightly 
  4. Whisk yolks
  5. Remove from heat and whisk half of mixture into yolk mixture. Return everything to saucepan , add cardamom powder and gently heat over medium low heat until mixture thickens.
  6. Off the stove . Grind it in a grinder to get a smooth consistency
  7. Chill it
  8. Meanwhile let us make soft boiled egg. Bring water to boil
  9. Then add egg close it and cook for 5 minutes
  10. Remove egg from pan and carefully crack into a small bowl. 
  11. Toast 2 slice of bread
  12. Spread kaya jam over one slice of toast
  13. Place slice of butter
  14. Close it with other slice of toast and cut into half
  15. Serve kaya toast with black coffee and soft boiled egg along with soya sauce and pepper.
