ABOUT Khachapuri "Georgian Cheese Bread" RECIPE

These are savory smelling rolls with cheese squishing out of them are literally bursting with flavours.. They can be round, square or boat shaped. Fillings are often mix and match cheese types with or without eggs to achieve the desired flavour and consistency.

Ingredients Serving: 10

  1. For cheese filling- 500 gms mozzarella cheese, grated
  2. 1 cup feta cheese, grated
  3. 1/2 cup fresh coriander, finely chopped
  4. 2 green chilli, finely chopped
  5. 1/4 tsp black pepper powder
  6. For the dough- 900 gm All purpose flour
  7. 1 tsp Salt
  8. 1 cup butter, room temperature
  9. 2 cups buttermilk
  10. 1 tsp baking soda
  11. 1 tbsp Vinegar
  12. 2 tbsp whole milk, for glazing the rolls

Instructions

  1. For the filling- mix all the ingredients required for filling. Keep aside.
  2. For the dough- Rub butter and flour so it gets the sandy (breadcrumbs) texture.
  3. Whip buttermilk until very light. Add soda, continue whipping. Add vinegar, the mixture will become foamy.
  4. Add buttermilk mixture to flour butter mixture and knead into a smooth dough.
  5. Cover the dough and chill in refrigerator for 1-2 hours.
  6. Divide the dough into 10 pieces. Pat each piece into a circle, 1 inch in thickness.
  7. Fill each circle generously with cheese mixture.
  8. Bring the sides close together and twist the top to close it.
  9. Brush milk over each rolls.
  10. Bake in preheated oven at 220 C for 15 minutes.
