ABOUT Pathrade RECIPE

Mangalorean traditional dish pathrade is wrapped in banana leaves.

Ingredients Serving: 5

  1. 2 cup boiled rice
  2. 2 cup white dosa rice
  3. 1 lemon sized tamarind
  4. 2 lemon sized Jaggery
  5. 4 red chillies
  6. 1 cup grated coconut
  7. 1 tsp cumin
  8. 2 tsp coriander seeds
  9. 1/2 tsp turmeric powder
  10. Salt 1 tsp
  11. Water 2 cup
  12. Finely chopped Colocasia leaves 4-5 cup
  13. Banana leaves rectangle shape few

Instructions

  1. Wash and soak the rice 4-5 hours.
  2. Drain the water and grind it by using very little water along with cumin, salt, coriander seeds, coconut, red chilli, turmeric powder, Jaggery and tamarind.
  3. The batter should be finely ground but dryish.
  4. Mix well the finely shredded colocasia leaves to the ground batter.
  5. On the working surface place of a banana leaf place some batter in the middle. (see the picture)
  6. Fold the leaves along the sides.
  7. Place the wrapped pathrodes on the shelf inside the streamer, cover and cook.
  8. Cook 20 minutes in high flame and remaining 20 minutes in low flame.
  9. Turn off the flame and allow it to cool.
  10. Open and have it with chutney or curry by sprinkling coconut oil.
