ABOUT Avial (15 Mix Vegetable curry) RECIPE

This is the most healthiest recipe in my list as it has a history. It was invented by Bheema, one of the Pandavas. It is so tasty and healthy. It is prepared in south india on all festive occasions.

Ingredients Serving: 5

  1. Mix Vegetables of equal quantity cut length wise
  2. Carrot 1
  3. Capsicum 1
  4. Beans 5
  5. Broad beans 5
  6. Cluster beans 5
  7. Pumpkin white
  8. Sweet Pumpkin
  9. Peans 1/4 cup
  10. Potato 1
  11. Sweet potato 1
  12. Colacasia 2
  13. Yam small pieces
  14. Raw banana 1/2
  15. Brinjal 1
  16. Drumstick 1
  17. Salt
  18. Turmeric powder 1/2 tsp
  19. For blending
  20. Coconut 1 full medium size. Grated
  21. Jeera 1 tsp
  22. 3-4 green chillies
  23. 1.5 cup thick curd

Instructions

  1. Cut yam, brinjal and raw banana lengthwise
  2. Cut Carrot, beans, broad beans, white pumpkin, sweet pumpkin, colacasia, drumstick, cluster beans, capsicum, sweet potato and potato lengthwise
  3. Clean required peas
  4. Add cut Vegetables, salt as per your taste, 1/2 TSP turmeric powder and 1 cup water in Pressure cooker. Pressure cook for 3 whistles and release pressure manually.
  5. Use 1 full medium size coconut. If the size of coconut is big use half shell. Add grated coconut, 3-4 green chillies and 1 TSP jeera in blender. Blend.
  6. Now add 1.5 cup thick curd. Blend to smooth paste
  7. Add it to cooked vegetables. Mix gently. Cook for 2 minutes. Turn off the flame.
  8. To prepare tempering Heat a kadai, add 1 tbsp coconut oil. When it is hot add Mustard seeds. When it cracks add curry leaves. Add tadka to Avial
  9. Serve with boiled rice or Adai
