Ingredients Serving: 2

  1. 4 tbsp ghee
  2. 1/4 tsp carom seeds
  3. 1/2 tsp asafoetida
  4. 2 piece potatoes
  5. 2 piece brinjals
  6. 4 piece green chilies
  7. 3 tbsp sweet potatoes
  8. 3 tbsp purple yam
  9. 3 tbsp chopped tomatoes
  10. 3 tbsp pigeon peas
  11. 3 tbsp green peas
  12. 1 cup soak rice
  13. 2 cup water
  14. Ingredients for methi Muthiya
  15. 3 tbsp corusely crush whole wheat
  16. 2 tbsp gram flour
  17. 1 tbsp semolina
  18. salt as required
  19. 1 tsp coriander powder
  20. 1/4 tsp cumin powder
  21. 1/2 tsp red chilli powder
  22. 1/4 tsp turmeric
  23. 1/2 cup chopped fenugreek leaves
  24. 2 tbsp curd
  25. pinch of baking soda
  26. 1 tbsp sugar
  27. 1 tsp oil
  28. 1 tsp lemon juice
  29. Ingredients for stuffing
  30. 1 tbsp gram flour
  31. 2 tbsp Undhiya masala
  32. 1 tbsp red chilli powder
  33. 1/2 tbsp coriander powder
  34. 1/2 tsp cumin powder
  35. 1/2 tsp turmeric powder
  36. 1/4 tsp gram masala
  37. 1 tsp sesame seeds
  38. salt as required
  39. 1 tbsp chopped fresh garlic
  40. 1 tbsp fresh coriander
  41. 2 tbsp sugar
  42. 1 tbsp green chilli paste
  43. 1 tbsp lemon juice
  44. 1 tsp oil

Instructions

  1. Take a bowl add all methi muthiya ingredients and make soft dough
  2. Grease your hand with oil and make a small oval shaped muthiya from it
  3. Heat oil in pan and fry the muthiya
  4. In hot pressure cooker add ghee and carom seeds when carom seeds begin to crackle add asafoetida
  5. Add pigeon peas, green peas , chopped potatoes, chopped purée yam and stuff vegetables and stir it
  6. Add chopped tomatoes and soak rice and cook few minutes
  7. Add leftover stuffing masala and stir very well
  8. Add water and some salt and mix well
  9. pressure cook the all ingredients for two whistles
  10. Open the pressure cooker and add methi muthiya and cook few minutes
  11. For garnish
  12. methi muthiya
