Ingredients Serving: 4

  1. 1/2 large cauliflower cut in florets
  2. 3/4 cup cooked rice
  3. 1/4 cup breadcrumbs
  4. 1/3 cup shredded cheddar cheese
  5. Salt and pepper to taste
  6. 1/2 tbsp red chili powder
  7. 1 egg
  8. 1/2 cup thinly sliced red cabbage
  9. White vinegar
  10. 4 burger buns
  11. 1 tbsp olive oil
  12. Mayonnaise for topping
  13. Pesto ( homemade or store-bought) for topping
  14. Additional olive oil for brushing


  1. Preheat oven to 180, toss cauliflower with olive oil. Spread over baking mat. Bake for 10-12 minutes. Allow to cool. Grind the cauliflower
  2. Soak red cabbage in vinegar for 1 hour. Vinegar should be just enough to soak cabbage
  3. In a bowl, add cauliflower, rice, egg, olive oil, spices and salt. Mix well. Make 4 balls and shape into patties. Place patties on greased baking tray. Brush patties with olive oil
  4. Preheat oven to 180. Bake for 20-25 minutes until done
  5. Assemble burger. Apply mayonnaise on bottom bun. Apply pesto on top of mayo on bottom and top bun. Place patties on pesto. Now place cabbage on top of patties and then place top bun. Serve hot with ketchup
