ABOUT Aloor Chop/Potato Fritters Bengali Style RECIPE

Aloor Chop is a famous street food of Kolkatta. It is found in any Tele Bhaja shop (Shop which sales fried food) in any corner of the street. It is normally had in the evening with garam... garam.. Chai (hot... hot.... tea) and served with Muri (Puffed Rice). Aloor Chop or Potato Fritters is a Kolkata styled teatime snack. A lot of people of Kolkata have a culture of having Aloor Chop and moori in the evening along with their tea or coffee. Aloor chop is one of the most common fried snack there. This snack is preferred by the people of Kolkata as their evening munching snack. Aloor Chop is basically prepared by combining boiled potatoes with some flavorful spices, so as to give it a flavorful taste. The potato mixture is made into small balls on the palm and coated with the spiced besan paste. The fritter is then deep fried in boiling oil, which gives it a slight crunch. The moori which is served along the Aloor Chop just adds up its taste. The Aloor Chop is enjoyed with green mint chutney and tea or coffee.

Ingredients Serving: 6

  1. For Stuffing:
  2. 2 Pinch of Soda bicarbonate
  3. Salt to taste
  4. 1/4 tsp chilli powder
  5. 1 cup Gram flour (Besan)
  6. For the Batter and frying:
  7. Few Coriander leaves chopped
  8. Salt to taste
  9. 2 Pinches of Garam Masala
  10. 1 tbsp Bhaja Masala
  11. 1/4 tsp Ginger paste
  12. 1 tsp Green chillies chopped
  13. 2 large Potatoes boiled and mashed
  14. Oil for frying
  15. For the Bhaja Masala
  16. Roasted Cumin seeds 2 tbsp
  17. Roasted Coriander seeds 2 tbsp
  18. 1 Red Dry Chilli

Instructions

  1. For the Stuffing: Mixed all the ingredients for stuffing together properly.
  2. Divide the mashed potatoes into equal proportions.
  3. Make balls of each portion and flatten it. Keep it aside while the batter is being made.
  4. For making the Bhaja Masala, take equal quantities of Cumin seeds and coriander seeds with a dry red chilli as per liking. Dry roast the seeds and grind with the chili and store in an air tight container.
  5. For the Batter and frying: Take a mixing bowl, add all the ingredients for the batter, except oil.
  6. Add water, little at a time to make a thick batter.
  7. Heat the oil in a wok.
  8. Take the potato chop one at a time, dip it into the batter. Add the chop into the hot oil and fry till golden brown in colour.
  9. Serve hot with Muri (Puffed Rice) and hot tea.
