Ingredients to make Vegetables medley

  • Finely chopped carrot 1/2 cup
  • Washed and Finely chopped spinach 1cup
  • Finely chopped onions 2 tablespoon
  • Finely chopped tomato 1 tablespoon
  • ginger garlic paste 1/2 Tablespoon
  • Boiled corns 1/2cup
  • sesame seeds 1/2 tablespoon
  • Salt and chilly according to taste
  • Garam masala 1 teaspoon
  • Dhaniya powder 1/2 teaspoon
  • Roasted cottage cheese 1 slice
  • ghee 1 tablespoon
  • hing 1 pinch
  • cumin seeds 1 teaspoon

How to make Vegetables medley

  1. First heat a non stick pan and add ghee in it. Add cumin seeds and allow to splutter.
  2. Now add hing and onions. Saute till transparent.
  3. Add ginger garlic paste and saute for a minute.
  4. Add tomatoes and keep sauting till fat releases. Add all spices and mix nicely.
  5. Add carrots in the pan and saute for 2 minutes on low flame.
  6. Now add chopped spinach and keep stirring till it becomes dry and soft.
  7. At this stage add sesame seeds and corns. Nicely mix it and off the flame.
  8. Vegetables medley is ready . Garnish it with cottage cheese and serve hot with naan or chapati.

My Tip:

Peanuts can also be added in it to give it nutty flavour.
