ABOUT Sukto(vegetable medley in Bengali style) RECIPE

Sukto is a vegetable medley prepared in Bengali household. It consists an array of vegetables. Bittergourd is the main ingredient of this dish,other vegetables are pumpkin,plantain,sweet potato,ridge gourd,drumsticks,eggplant and raw papaya. Dried lentil dumplings(badi) is also an important ingredients for making sukto. We start with tempering heat mustard oil with a spice called radhuni,it can be substitute with dill seeds or methi seeds. Poppy seed paste and mustard paste used along with milk and ghee,we don't use green chilies or any chilies in this dish. It is a authentic Bengali luncheon dish served with steamed hot rice. Away from home for long time is painful sometime,this dish make me feel like home. The smell the taste reminds me dish cooked by my mom. For me this is a very comfort food for me.

Ingredients Serving: 2

  1. 6 piece badi(dry lentil dumplings)
  2. 1 bitter gourd(thin slices)
  3. 1 sweet potato ( julienne)
  4. 1 cup of eggplant (diced)
  5. 1 cup of pumpkin( diced)
  6. 10 piece of drumstick
  7. 1/2 cup raw papaya(diced)
  8. 1/2 cup ridge gourd(julienne)
  9. 1/2 tbsp poppy seed paste
  10. 1 tbsp sugar
  11. 1/2 cup Milk
  12. 2 tsp turmeric powder
  13. 1 tsp cumin powder
  14. 1 tsp radhuni/dill seeds/ methi seeds
  15. 1 bay leaf
  16. 1 tbsp ginger paste
  17. 1 tbsp ghee
  18. Mustard oil
  19. Salt for seasoning

Instructions

  1. In a frying pan heat mustard oil. Fry badi till light brown.Keep aside. In same oil fry bitter gourd slices until crispy. Drain in a paper towel and keep aside.
  2. Add 1 tbsp more oil,heat it up then add bay leaf and radhuni. After it starts crackling add all vegetables. Fry a bit then add salt and turmeric powder. Cook for 5 minutes in low heat.
  3. Add poppy seed paste and mustard seed paste and cook for 5 minutes. Add cumin powder and sugar. Add 1 cup of water then covered and cook for 15 minutes or until vegetables are well cooked.
  4. After 15 minutes add crispy bitter gourd slices and badi. Add ginger paste and cook for 5 minutes then add ghee and milk. Let it boil,as it start boiling switch off the gas. Sukto is ready cool it before serving. It tastes best when it is cold and served with steamed rice.
