Ingredients to make veg takatak

  • small sized brinjals 4-5
  • potatoes 2
  • capsicum 1
  • bitterguard 3
  • oil for frying
  • salt to taste
  • redchilli powder 11/2tsp
  • turmeric powder 1/2tsp
  • coriender powder 3tsp
  • chopped spring garlic 1tsp (optional)

How to make veg takatak

  1. Cut brinjals in two halves
  2. Peal and cut potatoes in round shape
  3. Cut capsicum lenghtwise
  4. And peal and cut bitterguard in two halves and marinate it with 1/2tsp of salt keep aside
  5. Heat oil in deep pan add brinjals and fry on medium flame to the golden brown texture
  6. After brinjals add potato discs and fry on low flame till potatoes get cooked properly
  7. After potatoes add capsicum cook on medium flame till get cooked
  8. Now rinse and wash bitterguard in water and squeez extra water and then fry on low flame to the golden colour
  9. After frying all the vegetables mix a the veggies in a pan
  10. Add salt redchilli powder turmeric powder and coriender powder mix well and saute for 1-2minutes
  11. Add spring garlic and switch off the flame
  12. Veg takatak is ready can be served with roti ,poori,dalrice as a side dish

My Tip:

More veggies like ladyfinger yam can be added
