An incomparably moist and buttery cake with some nuts for a bit of a crunch.Recipe adapted from The Cake Bible.

Perfect Nutty Pound Cake

Ingredients to make Perfect Nutty Pound Cake

  • 3 tbsp Milk
  • 184gms Unsalted butter(softened)
  • 3 Large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups flour
  • 3/4 cup fine sugar
  • 1 tsp Baking powder
  • Handful of cashewnuts
  • 1/4 tsp salt

How to make Perfect Nutty Pound Cake

  1. Preheat oven to 350 deg F. Grease and line cake pan.
  2. Lightly combine Milk, eggs and Vanilla in a bowl. Combine flour, sugar, baking powder and salt in another bowl and mix well at low speed to blend.
  3. Add the butter and half the egg mixture.Mix on low speed until moist, then increase speed and beat for a minute.
  4. Scrape down sides and add in the remaining egg mixture, beating well for a minute.
  5. Scrape batter into prepared pan and sprinkle cashews on top.
  6. Bake for 45 minutes or till a toothpick inserted in the center comes out clean.
