Jaggery and carrot rice

Ingredients to make Jaggery and carrot rice

  • 2 cup rice( soaked)
  • jaggery 300 gm or to taste
  • carrots grated 4
  • sugar 1/2 cup
  • Green caradamom 4
  • cloves 2
  • Black caradamom 2
  • Aniseed 2 teaspoon
  • almonds 10 chopped
  • raisins 15
  • dates 10 Chopped
  • cashews 10 chopped
  • ghee 4 tablespoon
  • water 4 cup

How to make Jaggery and carrot rice

  1. Put water into a pan and when it is hot add jaggery and make syrup.
  2. Add ghee in a pressure cooker and add almond, cashews, and raisins. Fry them and remove in a bowl.
  3. Now in this ghee add green and black caradamom, aniseed and cloves. Roast them .
  4. Add carrots and fry them for 5 minutes and stir constantly.
  5. After this add rice and saute it. Few minutes later add jaggery syrup and dates. mix well. Add fried nuts .mix well. Add sugar and mix well.
  6. Close the lid and cook till three whistle. Open the lid garnish it with chopped nuts . Your carrot jaggery rice is ready to serve.

My Tip:

You can adjust the cooking time according to your rice.
