Ingredients Serving: 3

  1. வெல்லம் 1 tablespoon
  2. கடுகு/உளுத்தம்பருப்பு/கறிவேப்பிலை- தாளிக்க
  3. புளிப்பு மாங்காய் - 3
  4. மிளகாய்தூள் - 1table spoon
  5. அரைத்த மிளகாய் விழுது - 1table spoon
  6. உப்பு - சிறிதளவு
  7. சிறிய வெங்காயம் -2 (optional)
  8. நல்லெண்ணெய்/தேங்காய் எண்ணெய் - 2 table spoon

Instructions

  1. முதலில் மாங்காயை சிறிதாக நறுக்கிக்கொள்ளவும். ஒரு பாத்திரத்தில் 1/2 கப் தண்ணீர் ஊற்றி மாங்காய் துண்டுகளை வேகவைத்து எடுக்கவும். (அதிக நேரம் கொதிக்க விட வேண்டாம். ஒரு நிமிடம் போதும். இல்லாவிட்டால் குழைந்து விடும்)
  2. சட்டியில் எண்ணெய் ஊற்றி, கடுகு, உ.பருப்பு, க.வேப்பிலை போட்டு தாளிக்கவும். வெங்காயம் சேர்த்து கிளறவும். வெங்காயம் வதங்கியதும் மாங்காய் துண்டுகளை சேர்க்கவும்.
  3. அதனுடன் மிளகாய் தூள், அரைத்த மிளகாய் விழுது கலந்து கிளறவும். ஒரு சிட்டிகை உப்பு போதும். புளிப்பு மாங்காய் எனில் அதிக உப்பு தேவையில்லை.
  4. எண்ணெய் பிரிந்து வரும் வரை கொதிக்க விட்டு, அவ்வப்போது மாங்காய் கொதிக்க வைத்த நீரை சேர்த்து கிளறவும். இறுதியாக கொஞ்சம் வெல்லம் சேர்த்து இறக்கவும்.
