Ingredients Serving: 10

  1. 2 cup moong dal
  2. 2 cups of maida
  3. 2 tbsp of ghee
  4. 2 tbsp cumin seeds
  5. 2 tbsp saunf / fennel seeds
  6. 2 tbsp coarsely grounded corriander seeds
  7. 4 tbsp Gram flour
  8. 1 tbsp Garam Masala
  9. Aamchur powder or lemon as per taste
  10. 1 tsp Asafoetida
  11. 5-6 green chillies
  12. 1 small piece of grated ginger
  13. 2 tbsp chillie powder
  14. Salt to taste

Instructions

  1. Clean the moong Dal in water for 2-3 times and soak it for 2 hours.
  2. After 2 hours lightly grind the Dal without any water.
  3. Knead the maida with ghee ,salt and water. Keep aside for half an hour with a closed lid or wet cloth
  4. Heat pan. Take a little oil. Splutter the cumin seeds, fennel seeds / saunf, corriander seeds. Put asafoetida / Hing powder and saute for a few seconds.
  5. Put grated ginger and green chillies. Saute for few minutes till the raw smell of ginger goes.
  6. Add in chilli powder and garam masala.
  7. Add besan flour and salt as per taste. Saute the mixture till it spreads out a beautiful aroma.
  8. Finally add the moong Dal. Add amchur powder or squeeze lemon juice
  9. Keep on stirring the mixture till all the ingredients are properly mixed. The colour turns into a dark brown. Take out the mixture in a plate and let it cool.
  10. Make small balls of maida dough and flatten it in the size of puris.
  11. Fill in 2-3 tsp of the mixture and cover it from all the sides. Take out the extras if any and flatten the dough into a small patice.
  12. Heat oil in a shallow pan. Fry the kachoris till it turns light brown in colour. Fry them in a low / medium flame. As the kachoris get cooked it will float in the oil. Turn it to other side and cook it.
  13. Serve with fried green chillies or chutney.
