ABOUT Kothu Roti RECIPE

One of the common street delicacy in kerala which claims its origin from Srilanka.

Ingredients Serving: 5

  1. Roti/ Chapati/ kerala paratha 6 nos
  2. Shredded chicken pieces 1 cup
  3. Onion 2 cup
  4. Ginger 1 tsp
  5. Garlic 1 tsp
  6. Green chilli 2 nos
  7. Turmeric powder 1/2 tsp
  8. Vegetables : Carrot, Beans, Cabbage, capsicum, spring onion
  9. Coriander leaves 2 tbsp
  10. Mustard sauce 1 tsp
  11. Tomato chilli sauce 1 tbsp
  12. Soya sauce 1 tbsp
  13. Garam masala 1 tsp
  14. Oil 1 tbsp
  15. Salt as needed

Instructions

  1. Cut roti/ chapati/ paratha into thin medium sized strips and keep it aside.
  2. Take broad pan heat oil and add onion,ginger,garlic,green chillies and saute .
  3. Add all the thin cut vegetables and allow a stir fry.
  4. When the vegetables get cooked add garam masala,turmeric powder.
  5. Now its time to add all the three sauces one by one.Add 1 tbsp of water.
  6. Add the roti pieces and allow it to take the flavours. Put in sim and cover with a lid for 3 mins.
  7. Now open and allow the roti or chapati to get slightly crispy.
  8. Add chopped coriander leaves and serve hot .
