Anarsa or Adhirasam is an Indian pastry-like snack commonly associated with the Indian festival like Diwali and special occasions like marriages. Traditionally Anarsas are made from soaked rice and jaggery. The rice is soaked in water for 3 days, where water is changed daily to mitigate fermentation. The rice is then dried and ground into a fine powder. and then it is mixed with jaggery.
