ABOUT Plantain stem parrupu kootu(South Indian delicacy) RECIPE

Plantain tree is one God gifted plant where all parts can be used for cooking. Mostly in South India plantain stem is widely used as poriyal or kootu.. Here I've added Toor dhal and grated coconut to enhance the flavor with onion, chilli, garlic, and tempered it with regular seasoning. Healthy and tasty kootu which can be eaten every day by all especially diabetic patients.

Ingredients Serving: 3

  1. Plantain stem 1feet in length
  2. Onion 1
  3. Garlic 3 cloves
  4. green chillies 3
  5. Thoor dhal 1/2 cup (pressure cooked with little turmeric powder)
  6. Grated Coconut 1/4 cup
  7. Oil 2 teaspoon
  8. Mustard seed 1 teaspoon
  9. Cumin seed 1/2 teaspoon
  10. Spilt urad dhal 1/2 teaspoon
  11. Bengal gram 1/2 teaspoon
  12. Cummin powder 1/2 teaspoon
  13. Turmeric powder 1/4 teaspoon
  14. Salt to taste
  15. Curry leaves and coriander leaves for garnishing.

Instructions

  1. Cut plantain stem like round disc and remove the fiber by using the finger.
  2. One more picture is added for young cooks.
  3. Before cutting the disc take a vessel filled with water. Add Buttermilk and salt to it.
  4. Cut the disc into small pieces and add in the Buttermilk salt water. It helps the plantain stem to de oxidize and retain it's original colour.
  5. Boil plantain stem with the same water by adding little turmeric powder.
  6. Let it boil for few minutes. Strain the water and keep it aside.
  7. Ingredients for this kootu.
  8. Heat oil in a wok. Add mustard seed, urad dhal, bengal gram and cummin seed. Let it splutter.
  9. Add chopped onion and garlic and saute well. Add green chillies to it.
  10. Add boiled plantain stem and mix well.
  11. Add pressure cooked thoor dhal to the plantain mixture and mix well.
  12. Add little salt.
  13. Let it cook for few minutes. Add grated coconut and switch off the flame.
  14. Garnish it with coriander leaves and curry leaves.
  15. This kootu goes well with sambhar, rasam or curd rice.
