Easy to make and tasty recipe made in a true konkani style

Sweet potato ( kanang) upkari

Ingredients to make Sweet potato ( kanang) upkari

  • Sweet potatoes 2 small
  • oil 2 tbsp
  • mustard seeds 2 tsp
  • Red chillies 3
  • jaggery 1/2 cup
  • Grated coconut 1/2 cup
  • asafoetida a pinch
  • salt to taste

How to make Sweet potato ( kanang) upkari

  1. Wash and peel sweet potatoes
  2. Dice them into cubes
  3. In a pan add oil on a medium flame
  4. Add mustard seeds
  5. When it splutters add red chillies and saute
  6. Then add diced sweet potatoes
  7. Add required amount of water just sufficient to cook
  8. Add salt to taste and asafoetida water
  9. Add grated Jaggery
  10. Cover and cook till sweet potatoes are cooked
  11. Add grated coconut
  12. Serve hot

My Tip:

Adjust jaggery according to the sweetness of sweet potatoes or you can omit it altogether
