ABOUT Sweet potato cookies RECIPE

I tried incorporating 5 winter ingredients in this cookie. Sweet Potato - a well known winter vegetable with good source of carbohydrates needed to produce energy for the extreme weather conditions Jaggery - gives warmth to the body to withstand the cold weather. Honey - a well known home remedy for cold and cough which is common in winter. Ghee - boosts your immune system to protect our body from allergies during winter. Dessicated coconut - actually I wanted to give snow flakes effect :yum: also coconut is widely used as a natural moisturizer for the body and in cold weather countries where fresh coconut is not available this dessicated coconut is a keeper!

Ingredients Serving: 10

  1. 2 cups whole wheat flour
  2. 1 cup sweet potato puree( sweet potato boiled and blended with 1/4 cup water)
  3. 1 cup powdered jaggery
  4. 2 tablespoons honey
  5. 1/2 cup ghee
  6. 1 teaspoon baking powder
  7. 1 teaspoon baking soda
  8. 3/4 teaspoon cinnamon powder
  9. 1/2 teaspoon salt
  10. Dessicated coconut for garnishing

Instructions

  1. Preheat your oven to 175ºC .Sieve together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  2. In a bowl, mix ghee, sweet potato puree, jaggery and honey until well combined.
  3. Slowly incorporate the flour mixture into the wet mixture to form a dough. Chill the dough for at least 30 minutes to 1 hour.
  4. Drop the dough by the heaping tablespoonful on a parchment paper lined baking tray.
  5. Press by hand to give an impression and sprinkle dessicated coconut over it.
  6. Bake at 170°C for 15 - 20 minutes, or until they are just beginning to brown around the edges.
  7. Cool for 15 mins until they are completely cool and serve.
