About Loaded Sweet Potatoes Recipe

Sweet potatoes loaded with veggies is going to be a super hit at your home when you make it and display beautifully for parties. The succulent filling and crunchy texture of the vegetables added with the sweetness of potatoes and cheese topping is going to make you want more and more of it. You can name it as a salad or even starter

Loaded Sweet Potatoes

Ingredients to make Loaded Sweet Potatoes

  • Sweet potato 1 ( a little stout one preferred)
  • Chopped onions 1/4 Cup
  • Chopped tomato 1/4 cup
  • Chopped capsicum 1/4 cup
  • Chopped cucumber 1/4 cup
  • Chopped garlic 1 tablespoon
  • chilli flakes 1 teaspoon
  • Mixed herbs 1 teaspoon
  • cream cheese 2 tablespoons
  • Mayonnaise 2 tablespoons
  • Pink salt 1/4 teaspoon
  • pepper 1/2 teaspoon
  • Mozzarella cheese grated 1/4 cup
  • coriander leaves / cilantro - few
  • Butter to grease the sweet potatoes

How to make Loaded Sweet Potatoes

  1. Preheat the oven to 180°C. Wash and scrub a stout sweet potato well and cut into half and grease lightly with butter.
  2. Line a foil on a baking tray and Bake at 180°C for 15 mins or until the centre is well cooked.
  3. Meanwhile prepare the filling. Add cream cheese , 1 teaspoon chilli flakes, 1/4 teaspoon pink salt , 1 teaspoon mixed herbs in a bowl. Mix well.
  4. To the mixture add 2 tablespoons mayonnaise and combine well together
  5. Add chopped onion, tomato, cucumber, capsicum, garlic, 1/2 teaspoon pepper powder and mix.
  6. Now the sweet potato will be cooked. Remove them carefully and scoop the centre part and add to the above mixture. Leave about 1/2 inch flesh to remain with the skin.
  7. Now spread the filling in it carefully by stuffing maximum possible to hold. Handle carefully as it will be very hot.
  8. Add the grated mozzarella cheese on top of it to cover the entire area and sprinkle some chilli flakes, mixed herbs and coriander leaves.
  9. Bake for 10 mins at 170°C or untill you see the cheese melting and coated well.
  10. Serve hot. But wait for one minute before you spoon in a bite as it will be very hot.
  11. Rich and creamy loaded sweet potatoes

My Tip:

The filling can be varied of your choice. Either cream cheese or mayonnaise only can be used.
