About Easy Egg Noodles in Chinese Style.... Recipe

These lightly flavoured egg noodles loaded with veggies is a keeper for sure. Very easily made with minimum ingredients and the best part is that if you are short of many veggies in your pantry, even then it can be made with whatever is around. But eggs are the must. You can add your favourite spices and sauces too to make it more spicy. I even add boiled eggs to them apart from the scrambled ones. A very handy recipe that comes to your rescue when you had a real busy day out.

Easy Egg Noodles in Chinese Style....

Ingredients to make Easy Egg Noodles in Chinese Style....

  • egg noodles dried 400 gm
  • garlic mince 1 tbsp
  • eggs 3
  • salt 1 tsp
  • Blackpepper 1 tsp
  • red chilli flakes 1 tbsp
  • Chilli garlic sauce 1 tbsp
  • spring onions 1 cup
  • onion finely chopped 1
  • capsicum finely chopped or cubed 1 cup
  • star anise 1
  • mace strand 1
  • olive oil 2-3 tbsp
  • coriander finely chopped 1/2 cup
  • tomato chopped 1 (optional)
  • Boiled eggs 4-6 (optional)

How to make Easy Egg Noodles in Chinese Style....

  1. Boil noodles in enough water with little salt and oil till al dente.
  2. Drain and set aside.
  3. Heat olive oil in a deep cooking pan.
  4. Saute garlic, mace and staranise.
  5. Add onions next and saute until light pink in colour.
  6. Now add red chilli flakes and pepper powder followed by chopped tomato and the other two veggies.
  7. Do not cook much. The crunch in them should be retained.
  8. Take out the veggie mix in a plate.
  9. In the same pan, break 3 eggs and scramble them and cook until soft.
  10. Add salt and pepper to it.
  11. Mix well and add the veggie mix and noodles both.
  12. Stir well and garnish with coriander and spring onions.
  13. Place two boiled eggs on top of each serving plate. It is optional. I usually serve it this way.
