Egg in Noodles deep fries with lots of veggies and sesame sauce. This is a recipe from Singapore.

Ingredients Serving: 6

  1. 1 big potato - boiled
  2. 1 cup noodles - half boiled
  3. 2 egg
  4. 1/2 cup corn flour
  5. 2 spoons chopped capsicum
  6. 2 spoons chopped carrot
  7. 2 spoons chopped onion
  8. 2 spoons spring onion
  9. 2 spoons corn - boiled
  10. 1 spoon green chilli chopped
  11. 4 spoons cabbage chopped in dice
  12. 2 spoons purple cabbage chopped
  13. salt as per taste
  14. 1 1/2 spoon soy sauce

Instructions

  1. Boil noodles in salt water. This is half cooked. Drain and coat with one spoon oil. Keep aside for cooling
  2. Heat one spoon oil in pan and stir fry all veggies on high flam. Add salt, pepper, soya sauce and stir for 1 min. Add egg and make a crumble of eggs. Remove from pan. Keep for cooling
  3. Stir potato in same pan and cool.
  4. Heat oil at least 1 1/2 cup in a pan for deep frying. If all ingredients are cool mix together and check the seasoning. Take some mixture and make a ball than roll on noodles on it. Press slowly. (Mix little).
  5. Little coat with corn flour and deep fry until noodles looked crispy.
  6. Serve with sesame sauce
