ABOUT Plum Glazed Grilled Chicken RECIPE

I am not much of a fruit lover but when it comes to plums, I always wanted to use that fruit as a core ingredient in meat or dessert in someway. Today I finally decided on trying my hands on this gorgeous looking fruit.

Ingredients Serving: 2

  1. 2 chicken leg pieces (i.e. 600 gms approx)
  2. 3 + 2 tbsp homemade spiced plum sauce
  3. 1 tsp smoked paprika
  4. 1 tsp Red Chili Flakes (optional)
  5. 1 tbsp Lemon Juice
  6. 1 tsp Garlic minced
  7. 1/2 tsp Oregano
  8. Salt to taste
  9. Plum Sauce Ingredients:
  10. 5 Plums
  11. 1 tsp Garlic (minced)
  12. 1/2 tsp Ginger (minced)
  13. 1/4 tsp Cumin powder
  14. A pinch of Star Anise powder (optional)
  15. 2 tbsp Onion (finely chopped)
  16. 3 – 4 tbsp Soy Sauce
  17. 2 tbsp Sriracha Chilli Sauce
  18. 1 tbsp Brown Sugar/Honey
  19. 1/4 cup Water

Instructions

  1. Clean and make few cuts in the chicken legs.
  2. Marinade the chicken with 3 tbsp spiced plum sauce, smoked paprika, chili flakes, garlic mince, lemon juice , oregano and salt to taste. Let it rest for 1 hour in your refrigerator.
  3. Preheat the griller. Spray some olive oil over the chicken pieces and grill for 10 to 12 mins, while turning occasionally.
  4. When your chicken is almost cooked, glaze your chicken legs with the remaining plum sauce and further grill it for 5 to 7 mins.
  5. Serve it hot with some salad or rice and enjoy!
  6. Plum sauce method:
  7. Slice plums into half and discard the pits. Now, cut into small pieces.
  8. In a saucepan, take plums, garlic, ginger, onion, cumin and cook on medium until plums are mildly browned and soft.
  9. Now add soy sauce, sriracha and brown sugar. Cook for 15 mins while stirring occasionally.
  10. Puree the mixture in a blender and slowly add little water to thin if desired.
  11. Store in your refrigerator for 2 weeks or in your freezer for 4-6 months.
