ABOUT Kesar Peda. RECIPE

Peda is a delicious and very poplular Indian dessert. Traditionally its make involves tidious and lengthy process where in milk is cooked for hours until thick and sweetened with sugar later shaped into small bite sized nuggets. But here i'm with a simplified and just way too easy microwave version of it that is equally tasty and mouth melting as store bought ones.

Ingredients Serving: 10

  1. 150 gm : Instant Dry milk powder
  2. 398 gm : Sweetened condensed milk
  3. 113 gm : Unsalted butter
  4. 10 to 12 : Saffron strands
  5. 1 tbsp : Warm Milk
  6. A pinch : Yellow food colour (optional)

Instructions

  1. To a small bowl add a tablespoon of warm milk. Stir in the yellow food colour (if using) and saffron strands. Allow them to stand until needed.
  2. To a microwave safe dish add the butter and melt it in microwave.
  3. To the melted butter add the milk powder, sweetened condensed milk and stir well.
  4. Cook on high in microwave for three of minutes stirring well after every minute of cooking.
  5. After three minutes if cooking we observe the mixture turning thick. Now add the saffron and yellow colour infused milk. Mix well until incorporated.
  6. Continue cooking in the microwave on high for another three minutes stirring in between after every minute of cooking.
  7. By now , The mixture turns deeper in colour. Its texture gets semi dry and non sticky to touch.
  8. Cool the mixture at room temperature until pliable.
  9. As cooled, the mixture dries out further and resembles wet crumble.
  10. For the shaping : Lightly grease your palms with oil or ghee and take a spoonful of mixture into your palm.
  11. Pressing the mixture between the palms massage the dough a bit. Shape them round and flatten them to pedas.
  12. Perfect and round pedas without using any mould.
  13. I haven't used any mould but you can use a peda mould or cookie cutter to cut out some fun shaped pedas.
  14. Repeat and shape rest of the mixture in the similar way and rest them on a plate for an hour at room temperature until cooled completely.
  15. Garnish with chopped nuts, silver warq or saffron strands according to preference.
  16. Make them and enjoy for this festival or Offer to God as prashad.
  17. Soft, mouth melting kesar pedas for you and family .
