Pistachios and cheese tarts

Ingredients to make Pistachios and cheese tarts

  • For tart
  • 2/3 cup of all purpose flour
  • Pinch salt
  • 1/3 cup chilled butter
  • 2tbsp water
  • For pistachios and cheese mousse
  • 6tbsp unsalted pistachios
  • 2tbsp castor sugar
  • 1 egg
  • 1/2 cup granulated sugar
  • 1/2 cup white chocolate chips
  • 1/2 cup mascorpone cheese
  • 2tbsp milkmaid condensed milk
  • 1tsp vanilla extract

How to make Pistachios and cheese tarts

  1. Seive flour and salt in a bowl
  2. Mix in butter and rub gently till bread crumbs texture is achieved.
  3. Now add in water and prepare the dough
  4. Cling wrap the dough and refrigerate it overnight
  5. Now take out the dough and roll it to 1inch thickness and set in the tartpan
  6. Blind bake the tart in a preheated oven at 200℃ for 20 minutes
  7. Now remove the weights and bake for another 10 minutes.
  8. Remove from tart pan once cool
  9. For pistachios and cheese mousse
  10. Blend the pistachios and castor sugar till fine powder is formed
  11. In a microwave safe bowl melt the white chocolate chips
  12. In a double boiler add in egg and sugar. Keep whisking vigorously until it doubles in volume and the mixture because rich and fluffy
  13. Take it off the heat and let it rest for 4-5 minutes
  14. Now add in the pistachios powder, cheese, milkmaid and white chocolate
  15. Mix well
  16. Pour the prepared mousse in tart shells
  17. Refrigerate it for 4-5 hours and let it set.
  18. Garnish with strawberries and slivered pistachios
