Ingredients Serving: 8

  1. 1.5 cups raspberries
  2. 3 Tbsp Honey
  3. 1tsp vanilla
  4. 1.5 tbsp chia seeds

Instructions

  1. Put the raspberries into a saucepan over medium heat on the stove. Mash the raspberries as they begin to heat up and break down.
  2. When the raspberries have broken down to a saucy consistency add the honey and vanilla and stir until combined. Remove from the heat and allow the mixture to cool a little.
  3. Add the chia seeds.
  4. Transfer the jam to a clean glass jar and allow it to cool completely. Once the jam has reached room temperature transfer it to the fridge for an hour to set.
  5. Store in an air tight jar in the fridge for up to one week.
  6. Use with pancakes, linzer cookies, crepes, cake fillings, toast, yoghurt, icecreams! The list is endless!
