Mango CupcakeS with Mango Buttercream

Ingredients to make Mango CupcakeS with Mango Buttercream

  • mango puree - 1 &1/2 cups
  • Melted butter - 1/3 cups
  • sugar - 2/3 cups
  • Baking powder - 2 teaspoon
  • baking soda - 1/2 teaspoon
  • Vanilla essence - 1 tablespoon
  • salt - 1/2 teaspoon
  • all purpose flour - 1 & 1/2 cups
  • mango Buttercream icing
  • mango puree - 1/2 cup
  • butter - 1/4 cup
  • Icing sugar - 1&1/2 to 2 cups

How to make Mango CupcakeS with Mango Buttercream

  1. Pre heat your oven to 365 F
  2. Whip the mango puree, sugar, melted butter and vanilla essence to form a light airy batter
  3. Sift the dry ingredients ( flour, baking powder, baking soda, salt) together and stir in to the wet batter 1 cup at a time
  4. Spoon the batter into the cupcake tray and bake for 20 - 25 minutes until an inserted toothpick comes out clean
  5. Meanwhile using a mixer whip the mango puree, butter and 1 cup of icing sugar to make the frosting.
  6. Add extra icing sugar as needed to get your desired consistency
  7. Once the cupcakes are baked allow them to cool before icing.
