ABOUT Khajur- Imli chutney RECIPE

Sweet and tangy,can be used for all type of chaats.

Ingredients Serving: 10

  1. 250 gm seedless khajur or dates
  2. 250 gm jaggery or gud
  3. One cup thick tamarind Water
  4. Half tsp salt or as per taste
  5. Half tsp red chilli powder
  6. One and half tsp roasted jeera powder
  7. Half cup hot water

Instructions

  1. Firstly wash khajur with cold water. Cut jaggery in to pieces.
  2. Then put khajur and jaggery in cooker along with half cup hot water. Keep it side for 10 min . Don't turn gas on.
  3. After 10 min close lid of cooker. Pressure cook it to 3 whistles
  4. Then when pressure cools take out khajur and grind it to paste in mixer. Don't throw the sweet jaggery water in which it is cook.
  5. After getting paste of khajur, mix it with imli or tamarind water and sweet jaggery water.
  6. With the help of strainer ,strain the liquid.
  7. After straining put the clear liquid got in a pan, to it add salt, chilli powder, jeera powder
  8. Put it on medium flame,bring it to boil till it gets little thick in texture. As on cooling it will get lightly more thick.
  9. Let it cool and then store in airtight jar
  10. Keep in fridge. Lasts upto 15 days.
