The recipe is simple .and rich in calcium,iron and several other important nutrition.

Easy Brinjal rice.

Ingredients to make Easy Brinjal rice.

  • Boiled rice - 2 cups
  • Thinly sliced,small brinjal - 10 number
  • Chopped onion - 1
  • Chopped tomato - 1
  • red chilli - 2 number
  • Crashed garlic - 6 cloves
  • oil - 3 to 4 Tbsp
  • mustard seeds - half tsp
  • Gram dhal - 1 tsp
  • Urad Dhal - 1 Tsp
  • Sambar powder - 1 tsp
  • Dhaniya powder - 1 tsp
  • Garam masala - half tsp
  • turmeric powder - ouater tsp
  • salt - required
  • coriander leaves - 1 tbsp

How to make Easy Brinjal rice.

  1. Heat a pan and add oil when it's hot add Mustard seeds,Gram dhal,urad dhal and hing and saute till the dhal turns color.
  2. Add chopped onion,Chilli,crashed garlic and saute till they start to turn brown in color.
  3. Add thinly chopped brinjals and saute for 5 minutes or until the brinjal get sauted nicely.
  4. Add chopped tomatoes with turmeric powder, sambar powder,dhaniya powder and garam masala.
  5. Mix well until the brinjal nicely coated with the masala. Add salt mix well and close it with a lid.
  6. Sim the flame.
  7. Let a stand till the brinjal gets cooked.
  8. Now add boiled rice and mix well with the brinjal masala.
  9. Garnish with coriander leaves. And serve the brinjal rice.
