Ingredients Serving: 4

  1. Green brinjal 2" long chopped 2 cup
  2. Cooked, cooled rice 2 cup
  3. Groundnut few
  4. Salt to taste
  5. Sambar powder 3 tsp
  6. Cooking oil 5 tsp
  7. Curry leaves few
  8. Mustard seeds 1 tsp
  9. Red chilli 1


  1. Heat oil in a pan, add mustard seeds, Red chilli, let it splutter.
  2. Add curry leaves and groundnut saute well.
  3. Add brinjal and saute till tender.
  4. Add salt and sambar powder, mix well.
  5. Finally add rice mix well in low flame and serve in hot.
