Ras Malai

Ingredients to make Ras Malai

  • milk 2 lt
  • sugar 150 gms
  • cardamom 2
  • saffron 10-12 strands
  • vinegar 2 tbsp
  • pistachios chopped
  • almond chopped

How to make Ras Malai

  1. Take two litres of milk in two vessels 1 lt in each
  2. Bring them to boil
  3. Add two tablespoons of vinegar to one vessel
  4. Milk will curdle
  5. Strain it in a strainer
  6. Tie it in a cloth for 20 mins to strain excess water
  7. Start kneading
  8. Knead it well
  9. Till creamy
  10. Now make small flatten balls out of it
  11. Take 1/2 ltr of water and 100 gms of sugar
  12. Bring it to a boil and add the chhena balls
  13. Cover the lid and cook till 1 whistle
  14. The chhena balls become double in size
  15. Boil the other 1 lt of milk
  16. Add 10-12 saffron strands in a cup of milk
  17. Stir continuously till the milk reduced to half
  18. Add the saffron milk to the reduced milk
  19. Add cardamom powder
  20. Add sugar as per ur taste
  21. Squeeze the chhena balls and put it into the reduced milk
  22. Refrigerate for 2 hours and serve chilled
