A delicious budget friendly pesto with fresh cilantro and almonds.

Ingredients Serving: 3

  1. almonds 1/2 c
  2. cilantro 200 g stalks and all cleaned and chopped
  3. garlic cloves 3 to 4
  4. lemon juice 2 tbsp
  5. Green chili 2 small
  6. Nutritional yeast flakes 2 tbsp
  7. salt to taste
  8. olive oil 1 tbsp


  1. Soak the almonds in boiling hot water for 10 mins.
  2. After 10 mins, drain the water and peel them. The soaking would have loosened up the peel.
  3. In a blender, place the peeled almonds, chopped cilantro along with the other ingredients except tplace the peeled almonds, chopped cilantro along with the other ingredients except the olive oil and blend to a smooth paste.
  4. Make sure you rest your blender in between, scrape down the sides and then complete the blending process.
  5. Once you have a smooth paste, add the olive oil finally and pulse the mixture for 10 secs.
  6. Transfer to a clean air tight container and use as requied.
  7. This pesto tastes great as a dip and also makes a wonderful spread for wraps and sandwiches.
