About RAJASTHANI MIRCHI VADA Recipe

Mirchi vada is a popular street food snack in jodhpur, Rajasthan.They are also called as chili cutlet.Large,non spicy and mild chillies are needed for it.The stuffing is a spiced mashed potato one.Crushed fennel seeds are added in the mashed potatoes which gives the potatoes a unique flavor, unlike other variations of stuffed mirchi pakoda served hot with tomato sauce or occasionally with mint and tamarind chutney.The mirchi vada of Jodhpur, Rajasthan is famous, as the water in that region lends it a unique taste. It combines well with another Jodhpur speciality MAWA KACHORI  dipped in sugary syrup.

RAJASTHANI MIRCHI VADA

Ingredients to make RAJASTHANI MIRCHI VADA

  • Rajasthani green chilly-6
  • gram flour-1cup
  • Boiled potatoes -2
  • Freshly chopped coriander leaves-2 tablespoon
  • coriander powder-1 teaspoon
  • turmeric powder-1/4 teaspoon
  • red chilly powder -2 teaspoon
  • Dry mango powder -2 teaspoon
  • Chat masala-1 teaspoon
  • cumin powder-1/4teaspoon
  • ginger paste-1teaspoon
  • green chilly -1(finely chopped)
  • Saunf/fennel seed-1 tabelspoon(dry-fried & grinded)
  • asafoetida-1pinch
  • cornflour-1 teaspoon
  • baking soda-1/4 teaspoon
  • oil-as much required for deep frying
  • salt to taste
  • water.

How to make RAJASTHANI MIRCHI VADA

  1. Slit the chillis from center keeping it joined at the other end.
  2. Take a bowl;smash the boiled potatoes & add coriander powder,turmeric powder,1 teaspoon red chilly powder,cumin powder,grinded saunf,dry mango powder,salt & chopped coriander leaves together.Mix them well with the smashed potatoes.Keep aside for 10-15 mins.
  3. Now,heat oil in a frying pan,temper it with asafoetida & add the ginger paste.Wait till raw smell goes out.
  4. Now,add the smashed potato; mix and saute for a while.Add chopped green chillis,pinch of salt as per taste and cornflour.
  5. Saute for another 2 minutes and spread it on a flat dish for cooling.
  6. Meanwhile take a big bowl to make a thick batter with gramflour,baking soda,1teaspoon red chilly powder and water.
  7. Now,fill the slited chillis with the potato stuffs.
  8. Dip them into the batter and deep fry.Serve hot with salad & sauce.Sprinkle chat masala on it.

My Tip:

Usually large,non spicy chillies are used in this recipe but if one lives outside india,then jalapeno pepper can be used
