Cut potato into four pieces and cook with little salt and water for 3 whistles.
When boiled ,peel skin and mash well without lumps.
Chop onions,capsicum,chillies,curry leaves , coriander leaves to fine pieces.
Heat 1 tsp ghee in a kadai ,add mustard and when mustard starts spluttering add chillies , capsicum , onions and saute till golden brown
Add mashed potatoes , salt , chilli powder , turmeric powder , curry leaves , coriander leaves.
Heat ghee in a pan , place bread slices on hot tawa , spread two tsp of potato mixture over the bread and press it gently and evenly.
Spread a drop of ghee over the potato mixture and let it boil for 30 seconds.
Now gently flip the bread to next side and let it toast for 30 seconds more till golden brown.
Remove from flame and serve hot with green chutney or tomato ketchup of your choice.
