ABOUT Korean Veggies Noodle soup RECIPE

Delicious blend of veggies in a flavorful broth spiced with Korean chili and spices.making a perfect one bowl meal .

Ingredients Serving: 2

  1. 1 cup mixed vegetables like cabbage , carrots, artichokes , sliced bell peppers .
  2. 2 tbsp soy sauce
  3. 1 tbsp gochujang chili paste
  4. 1 tsp chopped garlic
  5. 1 tsp sesame oil
  6. 2 tbsp Kochukaru Korean chili pepper flakes
  7. 1/2 cup firm tofu cubed
  8. 1/2 scallion chopped
  9. 3 cups vegetable stock or just water .
  10. 1 pack sweet potato noodles

Instructions

  1. in a large pan , cook noodles as per instructions . remove and cut to medium length .
  2. in another pan stir fry all vegetables , adding sauce, oil , chili flakes, gochujang
  3. add some vegetable stock or water and allow to boil with vegetables
  4. , add noodles and tofu finally , cook few more minutes . add salt , and scallions for garnish .
