About Chinese Mapo Tofu Recipe

Tofu cooked with meat in Flavour of beans, sauces renders this as most delicious side dish for rice

Chinese Mapo Tofu

Ingredients to make Chinese Mapo Tofu

  • 200 gms Tofu cut in cubes
  • 1/2 cup chicken stock
  • 3/4 cup minced meat (Soya granules for veg version)
  • 1 tbsp spicy black bean paste/ sauce
  • 1/2 tsp vinegar
  • 1 tsp sugar
  • 1 tsp cornstarch
  • 2 tsp soy sauce
  • 1.5 tsp red chili sauce
  • 3 tbsp sesame oil
  • 1/4 tsp ground peppercorns
  • 2 garlic cloves minced
  • 1 tsp Grated ginger
  • 4 spring onions chopped (white part only)
  • Green part of spring onions for garnish

How to make Chinese Mapo Tofu

  1. In a bowl, mix chicken stock, sugar cornstarch, soy sauce, red chilli sauce and keep it aside
  2. Heat sesame oil in a pan, add white spring onions, ginger and garlic. Saute until fragrant
  3. Add black bean sauce, ground pepper and mix well
  4. Add minced meat and saute until meat changes colour and is cooked
  5. Add tofu and gently mix without breaking tofu
  6. Add vinegar and chicken stock mix. Coat meat and tofu well. Bring to boil and cook until sauce thickens. I have skipped salt as the sauces and stock contains adequate salt
  7. Garnish with green spring onions and serve hot with rice
