About Kale Quinoa salad Recipe

A delicious blend of avocado , yogurt and peppers , giving this kale quinoa salad a great kick in the taste, a healthy bowl for a more fitful healthy life . .

Kale Quinoa salad

Ingredients to make Kale Quinoa salad

  • 1 bunch kale .
  • 1 avocado
  • 1 carrot
  • some cilantro leaves
  • 1-2 garlic cloves
  • 1 cup quinoa
  • salt as needed
  • 1 tbsp lime juice
  • 1-2 tbsp fresh cream
  • 1-2 jalepenos
  • some black pepper
  • 1/2 tsp cumin powder
  • some sunflower seeds
  • 1 tsp pine nuts
  • 1 small cup greek yogurt
  • 4-5 tofu cubed
  • 1 tbsp olive oil
  • ..:for the avocado dressing 1-2 garlic cloves
  • salt
  • lime juice 1 tbsp
  • 1 avocado
  • ¼ cup greek yogurt
  • 1-2 jalapenos
  • 1 tbsp olive oil
  • small pinch of pepper
  • 10 sprigs cilantro leaves
  • 1-2 tbsp fresh cream

How to make Kale Quinoa salad

  1. Combine all above in a blender , add more lime juice if it is too thick . Pour this over you salad . yummy !
  2. Wash and cook quinoa with 1 cup water in a pan , add a pinch of salt., let it cook till most of the water is absorbed
  3. Wash the kale leaves well, and remove thick veins , chop finely . Add chopped kale to a bowl, sprinkle some salt , oil olive, toss well ..
  4. Roast tofu in a pan , and allow to get a light brownish colour , use olive oil , Grate carrots and keep aside, chop cucumbers to fine pieces,
  5. Now mix all in a bowl with the chopped kale,sunflower seeds, some pine nuts , add pepper, cilantro leaves, add the roasted tofu, and finally drizzle the avocado dressing as needed. Delicious kale salad is ready to be enjoyed
