About Insalata al Forno Recipe

A light Italian salad served with a twist

Insalata al Forno

Ingredients to make Insalata al Forno

  • 11/2 cups finally chopped roasted eggplant
  • 1 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/4 cup finally chopped onions
  • 1/2 cup crumbled paneer
  • 1/4 cup finally chopped red bell peppers
  • 1 tbsp chopped green chilli
  • 1 tbsp fresh basil leaves
  • 1 tbsp chopped fresh parsley
  • 1 tbsp cheese spread
  • 1 tbsp tomato ketchup
  • 1/2 tsp chilli flakes
  • salt to taste

How to make Insalata al Forno

  1. Mix all the ingredients well and spoon into canopies
  2. sprinkle grated cheese on top and serve
  3. Garnish with basil leaves

My Tip:

We can also serve it with toasted crusty bread
