About Layered Pulao Recipe

This pulao recipe is one of the best rice cuisine which is cooked using rice, mutton keema,ground spices & lots vegetables.

Layered Pulao

Ingredients to make Layered Pulao

  • Basmati rice...1cup
  • Green cardamom...2
  • cinnamon stick...1 & 1/2"
  • cloves...4
  • salt
  • mint leaves...1cup
  • coriander leaves...1/2cup
  • curd...1/2cup
  • Green chilli...1
  • cumin powder...2tspn
  • Beetroot juice...1/2cup
  • Vegetables(peas,carrot,beans,capsicum)...1bowl
  • paneer cubes...100gm
  • Mutton keema...300gm
  • Chopped onion...1
  • ginger garlic paste...3tspn
  • Red chilli powder...1tspn
  • Kashmiri red chilli powder...1tspn
  • coriander powder...1tspn
  • Fresh malai_cashew nut paste...1/2cup
  • handful of coriander leaves
  • star anise...2
  • Garlic cloves...7
  • Chopped tomato...1
  • Dry red chilli...4
  • Fried cashew nuts & raisin...1/2cup

How to make Layered Pulao

  1. Wash the rice properly & boil it with salt, star anise, green cardamom, cloves & cinnamon stick.
  2. Fry cashew nuts & raisin in ghee.
  3. For vegetable preparation, make a spice paste of 4 dry red chilli,7 to 8 garlic,star anise, 1black cardamom,cinnamon stick & 2 green cardamom.
  4. Paste is ready.
  5. Heat oil, add cumin seeds & let it crackle.Add the spice paste ,chopped onion,tomato & ginger paste.Saute it for few minutes.
  6. Add all vegetables.
  7. Add all spices & some hot water.
  8. Add fried paneer cubes.Cook it for few minutes & keep aside.
  9. Now make green chutney mixing with mint leaves, coriander leaves, green chilli, cumin powder , salt & sugar
  10. Make three colour of rice..One is green rice mixing green chutney.Second one is red colour rice using beetroot juice & the another one is white.
  11. For mutton keema, heat ghee, add chopped green chilli,onion, tomato & ginger garlic paste.Saute it for a while.
  12. Add all spices.
  13. Add mutton keema.Stir it constantly.After 10 minutes add some hot water & cook it well.
  14. When it is cooked well add malai_cashew paste & cook it for another 5 minutes.Add coriander leaves & switch off the flame.
  15. Now take a big vessel.Put one layer white rice, put some fried cashew nuts & raisin on it.
  16. Add green rice over it.
  17. Add cooked mutton keema over it.
  18. Add beetroor rice over it & sprinkle ghee.
  19. Add vegetable gravy over it .
  20. Finally add white rice on it & sprinkle ghee again.Cover the vessel & cook it in low flame for another 10 minutes.
  21. Keep rest for 10 minutes & then flip the vessel in a plate.Serve it with salad & raita.
