A classic Indian dessert that actually is a multitude of many an important Indian desserts that adorn this thickened milk that is actually reduced after a long and slow simmering. It can be served with malpua, rasgulla, shahi tukda or jalebis. This one is a versatile dessert all in one that compliments every other famous and well known desserts of our Country. Ingredients to make Shahi Kesar Rabdi...

  • Full fat milk 2 litres
  • cardamom powder 1 tsp
  • Dry fruits slivered 1/2 cup
  • Milkmaid 1 cup
  • saffron strands 4-5

How to make Shahi Kesar Rabdi...

  1. Bring milk to a rolling boil in a heavy bottomed non stick pot.
  2. After it boils vigorously, lower the heat and allow it to simmer.
  3. Keep stirring and scraping the sides every now and then.
  4. After it reduces to almost half of it's original quantity, stir in the milkmaid and saffron.
  5. Mix well and add the nuts.
  6. Chill in the refrigerator until ready to serve.
  7. Enjoy with any of your favourite dessert as it's topping or on it's own.
