A traditional recipe of Yukhni Nulli Nahari

Yukhni Nulli Nahari

Ingredients to make Yukhni Nulli Nahari

  • 1 kg Mutton leg pieces
  • 2 onion roughly chopped
  • 1 inch ginger piece cut in 4 part
  • 1 whole garlic bulb
  • 2 bay leaves
  • 1 cinnamon stick
  • 2 black cardamom
  • 6 to 8 black pepper corn
  • 4 cloves
  • 2 green cardamom
  • 1 tsp fennel seeds
  • 1 tbsp corriender seeds
  • 1 dagad phool
  • For Gravy, 3 tbsp pure ghee or refined oil
  • 1 onion chopped sliced
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1/4 tsp turmeric powder
  • 1 tsp corriender powder
  • 1 and 1/2 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • 1/2 tsp nihari masala
  • 2 tbsp whisked curd
  • 1 and 1/2 tbsp wheat flour
  • salt as per taste
  • 2 tbsp fresh corriender chopped for Garnish
  • 1/2 lemon

How to make Yukhni Nulli Nahari

  1. Take fennel, corriender and dagad phool in muslim cloth and tie it properly and make bulb of it
  2. Now take leg pieces in vessels, add all Yakhni masala and muslim bulb ,salt and all whole garam masala in it and cook it till pieces tender(atleast 1 and 1/2 hours)
  3. Check the pieces, when flash released the bone, It's done switch of the gas
  4. Now heat ghee in a other vessel,add bay leaves and cinnamon stick, add sliced onion, when translucent add ginger and garlic paste
  5. Now add turmeric, corriender,red chilli powder, nahari masala,salt saute it and roast it
  6. Add whisked curd and stir
  7. In other side separate the legs and it's stock
  8. Now add leg pieces in roasted masala and mix well and coat masala on all picese
  9. Discard the muslim bulb, ginger and garlic pieces from the stock
  10. Mix wheat flour with 1/2 cup of water in a bowl and mix nicely no lumps remaining
  11. Now add separated mutton stocks and wheat flour mixture gradually in leg pieces vessel and simmer it for 6 to 8 minutes
  12. Adjust the salt according to taste
  13. Now add garam masala and simmer for few seconds
  14. Now add required amount of water, cover and cook for 2 minutes
  15. Finally add chopped corriender leaves and switch of gas
  16. Now Yakhni Billi Nahari is ready to serve
  17. Serve hot with chappati and rice
  18. Squeeze the lemon juice and sprinkle some fresh chopped corriender at time to serve
