Ingredients Serving: 4

  1. Mutton 500 gms
  2. Salt to taste
  3. Turmeric powder 1/2 tsp
  4. Lemon 1/2
  5. Thick curd 3/4 cup
  6. Few pieces of saffron
  7. Red chilli powder 2 tsp
  8. coriander powder 1 tsp
  9. Fennel Seeds 1 tsp
  10. Ginger powder 1 tsp
  11. oil
  12. Bay leaves 2
  13. Cinnamon stick 1 inch
  14. Cloves 5
  15. black cardamom 2
  16. Green cardamom 5
  17. Cumin seeds 1 tsp
  18. Asafoetida 1/2 tsp


  1. In a bowl, marinate mutton pieces with salt, turmeric powder and lemon juice. Keep it aside for 30 mins.
  2. Now make Yogurt masala paste in a separate bowl. Add thick curd few saffron strands, Kashmiri Chilly powder, Coriander powder, Fennel Seeds powder and ginger powder. Add some water and make it to a smooth paste
  3. For the Gravy: In a pan, heat some Oil.Temper it with Bay leaves, Cinnamon stick, Cloves, Black Cardamom, Green Cardamom, Cumin Seeds and asafoetida.
  4. To that, add the marinated mutton and saute until the meat changes to brown colour. Cover and Cook for 5 mins.
  5. Now add curd masala paste and mix well. Cover and cook for 15 mins.
  6. Add required water and mix well. Cover and Cook for about 45 minutes or so, till the meat becomes tender and soft.
  7. Add garam masala powder and chopped Coriander leaves.Mix well.
  8. Your delicious Mutton Karara is ready to eat with naan or roti. Gravy can be thick or thin as per your choice.
