About Andhra Chicken Recipe

A scrumptious recipe from the Andhra cuisine . I learnt this recipe from my grandmother . One of the best recipes that I have learnt from my amamma.

Andhra Chicken

Ingredients to make Andhra Chicken

  • chicken cleaned , pat dried 1/2 kg .
  • For Marination :
  • Hung curd 2 tablespoons
  • turmeric powder 1 teaspoon
  • Kashmiri chilli powder 1 teaspoon
  • chilli powder 1 teaspoon
  • ginger garlic paste 1 teaspoon
  • salt 1 teaspoon
  • fennel powder 3/4 teaspoon
  • Corn flour 1 teaspoon
  • For gravy :
  • Green chillies 2
  • Sesame oil 3 tablespoons
  • Fried 2 big onions ground to paste .
  • tomatoes ripe and big 2 finely grated .
  • curry leaves 2 sprigs
  • salt
  • Black pepper powder freshly crushed 1 tablespoon
  • coriander leaves for garnishing .

How to make Andhra Chicken

  1. Marinate the slit chicken pieces using the ingredients specified under marination .
  2. Don’t add water while marinating chicken .
  3. Overnight marination give the desired taste .
  4. If not , a minimum of 3 hours of marination is required .
  5. Heat oil in a wok .
  6. Add green chillies .
  7. Curry leaves .
  8. Add the ground onion paste . Sauté for 2 minutes .
  9. Add finely grated tomatoes .,Let the tomatoes cook well till it turns colour . Cover the wok while cooking .,
  10. Add the marinated chicken pieces .
  11. Maintain a medium flame throughout .
  12. Add salt to taste .
  13. Cover the wok and cook till chicken is cooked tenderly .
  14. Add freshly crushed black pepper ( using mortar and pestle) .
  15. Finally add coriander leaves .
  16. Serve hot with steamed rice / Set dosa / chappathis .

My Tip:

Don’t add water while cooking or marinating chicken . Ground onion using little water . Ground to a thick paste ., Water spoils the taste and texture of the cooked chicken .
