ABOUT Veg Pudina Rice RECIPE

This is a vegetable rice with pudina flavour.

Ingredients Serving: 4

  1. 2 cups Basmati rice soaked in water for 15 minutes
  2. 1 cup vegetables (Carrots, beans, potato, cauliflower and peas)
  3. 1/2 cup pudina
  4. Few dhania leaves ground coarsely
  5. 1/2 inch Ginger piece
  6. 2 cloves Garlic
  7. 2 green Chilli
  8. Bay leaves 1 or 2
  9. Shah jeera 1 to 2 tsp
  10. Cinnamon piece as per choice
  11. Cloves a few
  12. Big Elaichi 1
  13. 1/4 tsp Turmeric powder
  14. 1 medium sized onion cut long pieces
  15. 2 tbsp Oil
  16. 1 tsp Ghee
  17. Few paneer pieces fried for garnishing

Instructions

  1. Take heavy bottomed pan, add oil.
  2. Add khada masala, onions and keep frying. Add vegetables and turmeric powder.
  3. Add the coarse paste of pudina dhania, ginger and garlic.
  4. Add water nearly 3 and 1/2 cup. Add salt.
  5. Once it starts boiling, add soaked rice, salt, ghee and cover with a cloth tied lid.
  6. Heat a tawa and keep the pan on it and leave it on dum for 20 minutes. On a low flame.
  7. Garnish with fried paneer.
