Yakhini is popular dish of kashmir. I have made its veg version. Got this recipe from share recipes.

Ingredients Serving: 2

  1. 1 small bottle guard / lauki
  2. Ginger garlic paste 3 tsp
  3. 1 cup curd
  4. Red chilli powder 2 tsp
  5. Saunf powder 1 tsp
  6. Turmeric powder 1 tsp
  7. Dhaniya powder 2 tsp
  8. Salt as per taste
  9. 2 - 3 laung / cloves
  10. 2- 3 whole black pepper seeds
  11. 1 Tomato
  12. Finely chopped Corinader leaves for garnishing
  13. 1 tsp Cumin seeds
  14. Oil
  15. 2 tsp Besan / Bengal gram flour

Instructions

  1. First cut bottle gurad / lauki into long pieces and removes all seeds. Wash it properly. Keep it aside on a strainer for drying all water from the bottle guard.
  2. Now take a pan, add 2 tsp oil, add cumin seeds, black pepper seeds, cloves, add ginger garlic paste and saute it for 5 minutes.
  3. Add 2 tsp besan, saute it for 5 minutes. Add all the dry masalas like turmeric powder, red chilli powder, dhaniya powder and salt as per taste.
  4. Add curd to the mixture and stir continuously until oil separates.
  5. Add 1 cup water, let it boil on sim for the gravy.
  6. Deep fry bottle gourd pieces until they becomes golden brown.
  7. Add fried bottle gourd pieces to the gravy. Add chopped tomatoes and cover it for 5 minutes.
  8. Garnish with finely chopped coriander leaves. Serve hot with chapati or rice.
