We all drool on yummy coconut cookies. Here’s a recipe with minimal ingredients, yet tasting as yummy as ones available in store

Coconut Cookies

Ingredients to make Coconut Cookies

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1/2 cup desiccated/fresh coconut
  • 1 cup melted unsalted butter
  • cold milk as needed
  • 1:5 teaspoon salt
  • 1.5 teaspoon baking powder
  • 1 teaspoon finely ground cardamom powder

How to make Coconut Cookies

  1. Place all the dry ingredients in a bowl(preferably sieved)
  2. Add the butter and fold in well
  3. Add milk gradually to create a stiff batter
  4. Roll into a ball and keep refrigerated covered with cling foil for 30 minutes
  5. Preheat the oven to 180 degree celcius
  6. Sprinkle some flour on the working surface
  7. Scoop portions of the prepared dough and roll as thin as possible
  8. Cut into desired shapes using cookie cutters and lay them carefully on a baking tray
  9. After cutting off all the cookies, bake for 10-12 minutes or until crisp
  10. Store airtight
