ABOUT Vangi Bath and Vangi Bath Powder RECIPE

Vangi bath is the most popular dish of Karnataka. Combined with cooked rice, the fresh taste of roasted brinjals in aromatic spices can be savoured as a one pot meal without any sides to accompany it.

Ingredients Serving: 4

  1. Oil 4 tbsp
  2. Chana daal 1 tsp
  3. Urad daal 1 tsp
  4. Mustard seeds 1/4 tsp
  5. Onion 1
  6. Bay leaves 2
  7. Green peas 1/4 cup
  8. Brinjal 10
  9. Haldi 1/4 tsp
  10. Tamrind small ball soaked in 1 cup water
  11. Salt
  12. Tomato 1
  13. Curry leaves 15
  14. Jaggery 1/2 tsp
  15. Vangi bath powder ingredients:
  16. Cardamom 1
  17. Cinnamon 3 (1/2 inch each)
  18. Clove 5-6
  19. Chana daal 3 tsp
  20. Urad daal 2 tsp
  21. Dhaniya seeds 4 tsp
  22. Kashmir red chili 5-6
  23. Dry coconut 1/4 cup
  24. Oil 1tsp


  1. Fry vangi bath powder ingredients on low flame.
  2. Cut brinjals into cubical shape.
  3. Heat oil in a pan and put mustard seeds, urad dal, chana daal, onion, bay leaves and curry leaves.
  4. Put brinjals, peas, haldi, fry for some time and simmer for 5 minutes.
  5. Make sure brinjals are boiled 90%. Now add tamarind extract, salt, jaggery and tomato, cook for sometime till no water is left in the pan.
  6. Put Vangi bath powder and simmer it for 2 minutes. Now vangi bath masala(gojju) is ready.
  7. Mix this masala to cooked rice and serve hot.
