This is a traditional sambar powder. Sambar Powder is a flavorsome South Indian Style coarse textured spice powder made by mixing churning various types of basic Indian spices like cumin seeds, black peppercorns, fenugreek seeds, Kashmiri red chili powder, coriander seeds, curry leaves, turmeric powder, mustard seeds, cinnamon, dry coconut etc. with channa dal, toor dal and urad dal. Sambar Powder is mostly added with vegetables and lentils while preparing the different types of sambars to enhance their flavors. Sambar Powder can be made and kept in air tight containers for instant use. But the taste in on spot made masala to very different and the taste it extends to the dish is amazingly flavorful. The Sambar Powder or Sambar Masala can also be made using a grindstone, as it was done in old times. The taste of the masala made on a grindstone is just irreplaceable.
