Take the wholewheat flour, all purpose flour, salt and sugar in a bowl.
Add the cold butter cubes in to it and mix using clean fingers until they form small crumbs.
Then add 1-2 tbsp of ice cold water and mix to bind everything together. But do not over mix.
Once the dough is formed, make it into a disc and wrap it with a cling film.
Refrigerate for at least one hour.
Meanwhile prepare the apple filling.
For this, heat a pan.
Add the diced apples, butter, brown sugar and powdered cinnamon.
Mix and saute for 2-3 minutes until the apples softens a bit, but do not turn mushy.
Once done, switch the flame off and allow to cool down to room temperature.
After one hour, take the dough out of the refrigerator.
Divide it into 2 balls.
Roll each of the ball into flat discs of about 1/8 inch thickness.
Then using cookie cutter, cut into heart shapes (or any other shapes), in pairs.
Take a heart shaped dough and place 1 tbsp of the apple filling on it.
Then close it with another heart shaped dough.
Seal the edges with a fork.
Then make a criss cross slit with a knife on the top.
Apply milk or egg wash on top for the glaze (optional).
Finally sprinkle some sugar on the top.
Similarly prepare all the apple hand pies.
Preheat the oven to 190 degree centigrade.
Bake the apple hand pies for 25-30 minutes, until the pies turn golden brown in color.
Then allow to cool down a bit.
